Chicken Alfredo Pasta Recipe

 

Ingredients:

For the Chicken:

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning (a mix of dried oregano, basil, and thyme)
  • Salt and pepper to taste

For the Alfredo Sauce:

  • 1/2 cup (1 stick) unsalted butter
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

For the Pasta:

  • 12 ounces fettuccine pasta (or your choice of pasta)
  • Fresh parsley, chopped, for garnish (optional)

Instructions:

Prepare the Chicken:

  1. Season the chicken breasts with Italian seasoning, salt, and pepper on both sides.

  2. In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 6-7 minutes per side, or until they are cooked through and have a golden-brown crust. The internal temperature should reach 165°F (74°C).

  3. Remove the chicken from the skillet and let it rest for a few minutes. Slice the chicken into thin strips or cubes.

Make the Alfredo Sauce:

  1. In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for about a minute, or until it's fragrant.

  2. Pour in the heavy cream and bring it to a gentle simmer. Allow it to simmer for 2-3 minutes, stirring occasionally.

  3. Stir in the grated Parmesan cheese and garlic powder. Continue to cook, stirring, until the cheese is melted, and the sauce is smooth and thickened. Season with salt and pepper to taste.

Cook the Pasta:

  1. Cook the fettuccine pasta according to the package instructions until it's al dente. Drain the pasta.

Combine and Serve:

  1. Add the cooked and drained pasta to the Alfredo sauce. Toss to coat the pasta with the sauce.

  2. Place the sliced or cubed chicken on top of the pasta.

  3. Garnish with chopped fresh parsley if desired.

  4. Serve hot, and enjoy your delicious Chicken Alfredo Pasta!
