Chicken Alfredo Pasta

 

Ingredients:

For the Alfredo Sauce:

  • 1 cup heavy cream
  • 1/2 cup unsalted butter
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and freshly ground black pepper to taste
  • A pinch of ground nutmeg (optional)

For the Chicken and Pasta:

  • 2 boneless, skinless chicken breasts
  • 8 ounces fettuccine pasta (or your favorite pasta)
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper to season the chicken
  • Fresh parsley, chopped, for garnish (optional)

Instructions:

1. Prepare the Chicken: a. Season the chicken breasts with salt and black pepper on both sides. b. Heat olive oil in a skillet over medium-high heat. c. Add the chicken breasts and cook for about 6-8 minutes on each side, or until they are cooked through and no longer pink in the center. d. Remove the chicken from the skillet, let it rest for a few minutes, then slice it into thin strips.

2. Cook the Pasta: a. In a large pot of salted, boiling water, cook the fettuccine pasta according to the package instructions until it's al dente. b. Drain the pasta and set it aside.

3. Prepare the Alfredo Sauce: a. In a separate saucepan, melt the butter over medium heat. b. Add minced garlic and sauté for about 1 minute until fragrant. c. Pour in the heavy cream and bring it to a simmer. Let it simmer for a few minutes, stirring constantly. d. Reduce the heat and stir in the grated Parmesan cheese until the sauce is smooth and thick. e. Season with salt, black pepper, and a pinch of ground nutmeg if desired.

4. Combine and Serve: a. Add the cooked and drained fettuccine pasta to the Alfredo sauce. b. Toss the pasta in the sauce until it's well coated. c. Add the sliced chicken and gently combine. d. Heat the mixture briefly if needed.

5. Garnish and Enjoy: a. Serve the Chicken Alfredo pasta hot, garnished with chopped fresh parsley if desired.
