Classic Chicken Pot Pie

Prep Time: 20 minutes

Cook Time: 45 minutes

Serves: 6

Ingredients:

For the Filling:

  • 2 cups cooked chicken, diced (rotisserie chicken works well)
  • 2 tablespoons butter
  • 1 small onion, finely chopped
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1/2 cup frozen peas
  • 1/2 cup frozen corn
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup whole milk
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste

For the Pie Crust:

  • 2 pre-made pie crusts (store-bought or homemade)

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).

  2. Prepare the Pie Crusts: If using store-bought pie crusts, remove them from the packaging and let them come to room temperature. If making homemade crusts, have them ready.

  3. Sauté the Vegetables: In a large skillet or pan, melt the butter over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5-7 minutes, or until the vegetables begin to soften.

  4. Add Garlic and Flour: Add the minced garlic to the skillet and sauté for another minute. Sprinkle the flour over the vegetables and stir well to coat them evenly.

  5. Create the Filling: Slowly pour in the chicken broth while stirring constantly. This will help create a smooth, thickened sauce. Add the milk, peas, corn, and dried thyme. Continue to stir and cook until the mixture thickens and comes to a gentle simmer.

  6. Season and Add Chicken: Season the filling with salt and pepper to taste. Add the diced cooked chicken and stir to combine. Simmer for a few more minutes until the chicken is heated through.

  7. Prepare the Pie Dish: Place one of the pie crusts in a 9-inch pie dish, pressing it against the sides and leaving any excess hanging over the edge.

  8. Add the Filling: Pour the chicken and vegetable filling into the pie dish.

  9. Cover with Second Crust: Place the second pie crust on top of the filling. Trim any excess dough and seal the edges by pressing them together. You can also crimp the edges with a fork for a decorative finish.

  10. Vent the Pie: Create several small slits or a design on the top crust to allow steam to escape during baking.

  11. Bake the Pie: Place the pie dish on a baking sheet (to catch any potential drips) and bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the filling is bubbling.

  12. Cool and Serve: Allow the chicken pot pie to cool for a few minutes before slicing and serving. Enjoy your homemade classic chicken pot pie!

This classic chicken pot pie recipe is the ultimate comfort food. The combination of tender chicken, mixed vegetables, and a flaky pie crust is a satisfying, hearty meal that's perfect for any time of year.
