Creamy Garlic Parmesan Risotto

Ingredients:

  • 1 1/2 cups Arborio rice
  • 4 cups chicken or vegetable broth
  • 1/2 cup dry white wine (optional)
  • 1 small onion, finely chopped
  • 4 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Prepare the Broth: In a saucepan, heat the chicken or vegetable broth over low heat. You want to keep it warm but not boiling.

  2. Sauté Onion and Garlic: In a large, deep skillet or saucepan, heat the olive oil and butter over medium heat. Add the chopped onion and minced garlic. Sauté for about 2-3 minutes until they become translucent and fragrant.

  3. Toast the Rice: Add the Arborio rice to the skillet and stir well to coat it with the oil, butter, onions, and garlic. Cook for another 2-3 minutes, stirring frequently, until the rice becomes slightly translucent at the edges.

  4. Deglaze with Wine (Optional): If you're using wine, pour it into the skillet and stir. Allow it to cook until it's mostly absorbed by the rice, about 2-3 minutes.

  5. Add the Broth: Begin adding the warm broth, one ladleful at a time, stirring constantly. Allow each addition of broth to be mostly absorbed by the rice before adding more. This process should take about 18-20 minutes. The risotto should be creamy and the rice should be al dente.

  6. Finish the Risotto: Stir in the heavy cream and grated Parmesan cheese. Cook for an additional 2-3 minutes until the cheese is melted and the risotto is creamy.

  7. Season and Serve: Taste the risotto and add salt and pepper as needed. Keep in mind that the Parmesan cheese is salty, so be cautious with the salt. Serve the creamy garlic Parmesan risotto in individual plates or bowls. Garnish with chopped fresh parsley and extra Parmesan cheese, if desired.
