Grilled Lemon Herb Chicken

 

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 lemons, zested and juiced
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper to taste
  • Fresh parsley, for garnish (optional)

Instructions:

1. Prepare the Marinade: a. In a bowl, whisk together the lemon zest, lemon juice, olive oil, minced garlic, dried oregano, dried thyme, and dried rosemary. b. Season the marinade with salt and black pepper to taste.

2. Marinate the Chicken: a. Place the chicken breasts in a resealable plastic bag or a shallow dish. b. Pour the marinade over the chicken. c. Seal the bag or cover the dish and refrigerate for at least 30 minutes. You can marinate it longer for more flavor, even overnight.

3. Preheat the Grill: a. Preheat your grill to medium-high heat, around 375-400°F (190-200°C). b. Make sure the grill grates are clean and lightly oiled to prevent sticking.

4. Grill the Chicken: a. Remove the chicken from the marinade and let any excess marinade drip off. b. Grill the chicken for about 6-8 minutes per side or until the internal temperature reaches 165°F (74°C) and the chicken is no longer pink in the center. c. Cooking times may vary depending on the thickness of your chicken breasts, so be sure to use a meat thermometer to check for doneness.

5. Rest and Serve: a. Once done, remove the chicken from the grill and let it rest for a few minutes to allow the juices to redistribute. b. Garnish with fresh parsley if desired.
