 Homemade Chicken Alfredo

Prep Time: 10 minutes

Cook Time: 20 minutes

Serves: 4

Ingredients:

  • 12 ounces (about 340g) fettuccine pasta
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 cup grated Parmesan cheese
  • 1/4 cup unsalted butter
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper, or to taste
  • Fresh parsley, chopped, for garnish (optional)

Instructions:

  1. Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to the package instructions until al dente. Drain, reserving about 1/2 cup of pasta water, and set aside.

  2. Prepare the Chicken: Season the chicken pieces with a pinch of salt and pepper. In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook until it's no longer pink in the center and has a golden-brown sear, about 4-5 minutes per side. Remove the chicken from the skillet and set it aside.

  3. Sauté the Garlic: In the same skillet, add minced garlic and sauté for about 1-2 minutes until fragrant.

  4. Make the Alfredo Sauce: Reduce the heat to medium-low. Add the heavy cream, whole milk, and unsalted butter to the skillet. Stir continuously until the butter has melted and the mixture is warm. Do not let it boil.

  5. Add Parmesan Cheese: Gradually add the grated Parmesan cheese while continuing to stir. This will help thicken the sauce. Keep stirring until the cheese is fully melted and the sauce is smooth.

  6. Season the Sauce: Season the Alfredo sauce with salt and black pepper to taste. Adjust the seasonings as needed.

  7. Combine Chicken and Pasta: Return the cooked chicken to the skillet with the sauce. Add the drained fettuccine pasta. Toss everything together until the pasta and chicken are well coated with the sauce. If the sauce is too thick, you can use some of the reserved pasta water to adjust the consistency.

  8. Serve: Divide the homemade chicken Alfredo among plates. Garnish with chopped fresh parsley if desired.

  9. Enjoy: Serve your delicious homemade chicken Alfredo with a side of garlic bread, a green salad, or steamed vegetables.

This homemade chicken Alfredo recipe is a creamy, indulgent dish that's perfect for a special dinner or whenever you're craving comfort food. It's a crowd-pleaser that combines tender chicken and fettuccine with a rich and flavorful Alfredo sauce. Buon appetito!
