Lemon Garlic Shrimp Pasta

  • 8 ounces (about 225g) linguine or your choice of pasta
  • 1 pound (about 450g) large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • Zest and juice of 2 lemons
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper, to taste
  • Red pepper flakes (optional, for added heat)
  • Grated Parmesan cheese (for serving)

Instructions:

  1. Cook the Pasta:

    • Bring a large pot of salted water to a boil.
    • Add the pasta and cook according to package instructions until it's al dente.
    • Drain and set aside.

  4. Combine Shrimp, Pasta, and Sauce:

    • Return the cooked shrimp to the skillet with the lemon garlic sauce.
    • Toss the cooked pasta into the skillet as well.
    • Gently stir everything together to coat the shrimp and pasta with the delicious sauce.
    • Cook for an additional 2-3 minutes to heat everything through.
  5. Garnish and Serve:

    • Remove the skillet from heat.
    • Sprinkle chopped fresh parsley over the dish and give it a final gentle toss.
    • Taste and adjust the seasoning with more salt, pepper, or lemon juice if needed.
  6. Serve:

    • Divide the lemon garlic shrimp pasta among four plates.
    • Garnish with extra lemon zest and grated Parmesan cheese.
