Tomato Basil Soup
Ingredients:
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 (14.5 oz) cans of diced tomatoes
- 1 (14.5 oz) can of crushed tomatoes
- 2 cups vegetable or chicken broth
- 1/2 cup heavy cream
- 1/4 cup fresh basil, chopped (plus extra for garnish)
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese (optional, for garnish)
- Croutons (optional, for garnish)
Instructions:
1. Sauté Onions and Garlic: a. In a large pot, heat the olive oil over medium heat. b. Add the chopped onions and garlic and sauté until they become soft and fragrant, about 5 minutes.
2. Add Tomatoes and Broth: a. Stir in the diced tomatoes, crushed tomatoes, and vegetable or chicken broth. b. Add the dried oregano, and season with salt and pepper to taste. c. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15-20 minutes.
3. Blend the Soup: a. Use an immersion blender to carefully blend the soup until it's smooth and creamy. Alternatively, transfer the soup to a blender in batches, blending until smooth, and then return it to the pot.
4. Add Cream and Basil: a. Stir in the heavy cream and fresh basil. b. Allow the soup to simmer for an additional 5-10 minutes, stirring occasionally.
5. Serve: a. Ladle the Tomato Basil Soup into bowls. b. Garnish with additional chopped basil, grated Parmesan cheese, and croutons, if desired.
