Vegetarian Chickpea Curry

 

Prep Time: 10 minutes Cook Time: 25 minutes Serves: 4

Ingredients:

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons curry powder
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) coconut milk
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions:

  1. In a large skillet, heat olive oil over medium heat. Add chopped onions and cook until translucent.

  2. Stir in minced garlic and grated ginger, and cook for another minute.

  3. Add curry powder and cook, stirring, for a couple of minutes.

  4. Add chickpeas, diced tomatoes, and coconut milk. Season with salt and pepper.

  5. Simmer for about 15-20 minutes, or until the sauce thickens.

  6. Serve the vegetarian chickpea curry over rice or with naan bread. Garnish with fresh cilantro.
