Creamy Garlic Parmesan Chicken Pasta
Ingredients:
- 8 oz (about 225g) fettuccine pasta
- 2 boneless, skinless chicken breasts, thinly sliced
- Salt and black pepper to taste
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup (240ml) chicken broth
- 1 cup (240ml) heavy cream
- 1 cup (100g) grated Parmesan cheese
- 1 teaspoon dried Italian herbs (oregano, basil, thyme)
- Fresh parsley, chopped, for garnish
Instructions:
Cook the Pasta:
- Bring a large pot of salted water to a boil.
- Cook the fettuccine pasta according to the package instructions until al dente. Drain and set aside.
Prepare the Chicken:
- Season the thinly sliced chicken breasts with salt and black pepper.
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
- Add the sliced chicken and cook until golden brown on both sides and cooked through. Remove from the skillet and set aside.
Make the Sauce:
- In the same skillet, add another tablespoon of olive oil.

- Gradually whisk in the grated Parmesan cheese, stirring constantly until the cheese is melted and the sauce is smooth.
- Sprinkle in the dried Italian herbs and continue to simmer until the sauce thickens slightly.
Combine and Serve:
- Add the cooked chicken back to the skillet, stirring to coat it in the creamy sauce.
- Finally, add the cooked fettuccine pasta to the skillet, tossing until the pasta is well coated in the creamy garlic Parmesan sauce.
Garnish and Enjoy:
- Garnish the dish with fresh chopped parsley.
