Ingredients:
- 8 oz (about 225g) linguine or your favorite pasta
- 1 lb (about 450g) large shrimp, peeled and deveined
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (adjust to taste)
- Salt and black pepper to taste
- 1 cup cherry tomatoes, halved
- 1/2 cup fresh parsley, chopped
- 1/4 cup freshly grated Parmesan cheese
- 2 tablespoons olive oil
Instructions:
Cook the pasta: Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and set aside.
Prepare the shrimp: Pat the shrimp dry with paper towels and season with salt and black pepper.
Cook the shrimp: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the shrimp and cook for 2-3 minutes per side or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
Make the garlic butter sauce: In the same skillet, add the remaining olive oil and 2 tablespoons of butter. Add minced garlic and red pepper flakes. Sauté for about 1 minute or until the garlic becomes fragrant.
Combine shrimp and pasta: Return the cooked shrimp to the skillet. Add the cooked pasta, remaining butter, cherry tomatoes, and chopped parsley. Toss everything together until well combined and heated through.
Garnish and serve: Sprinkle freshly grated Parmesan cheese over the pasta and shrimp. Give it a final toss to incorporate the cheese. Serve immediately, garnished with extra parsley and a pinch of red pepper flakes if desired.
