Garlic Butter Shrimp Pasta."

 

Ingredients:

  • 8 oz (about 225g) linguine or your favorite pasta
  • 1 lb (about 450g) large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • Salt and black pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup freshly grated Parmesan cheese
  • 2 tablespoons olive oil

Instructions:

  1. Cook the pasta: Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and set aside.

  2. Prepare the shrimp: Pat the shrimp dry with paper towels and season with salt and black pepper.

  3. Cook the shrimp: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the shrimp and cook for 2-3 minutes per side or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

  4. Make the garlic butter sauce: In the same skillet, add the remaining olive oil and 2 tablespoons of butter. Add minced garlic and red pepper flakes. Sauté for about 1 minute or until the garlic becomes fragrant.

  5. Combine shrimp and pasta: Return the cooked shrimp to the skillet. Add the cooked pasta, remaining butter, cherry tomatoes, and chopped parsley. Toss everything together until well combined and heated through.

  6. Garnish and serve: Sprinkle freshly grated Parmesan cheese over the pasta and shrimp. Give it a final toss to incorporate the cheese. Serve immediately, garnished with extra parsley and a pinch of red pepper flakes if desired.
