Garlic Butter Shrimp Pasta
Ingredients:
- 8 oz (225g) linguine or your favorite pasta
- 1 pound (450g) large shrimp, peeled and deveined
- 4 tablespoons unsalted butter, divided
- 4 cloves garlic, minced
- 1 teaspoon red pepper flakes (adjust to taste)
- 1 cup cherry tomatoes, halved
- 1/2 cup chicken broth
- 1/4 cup dry white wine (optional)
- Salt and black pepper, to taste
- 1/4 cup fresh parsley, chopped
- Grated Parmesan cheese, for serving
Instructions:
1. Cook the Pasta:
- Bring a large pot of salted water to a boil. Cook the linguine according to the package instructions until al dente. Drain and set aside.
2. Prepare the Shrimp:
- In a large skillet, melt 2 tablespoons of butter over medium heat. Add the shrimp and cook for 1-2 minutes per side, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
3. Garlic Infusion:
- In the same skillet, add the remaining 2 tablespoons of butter. Add minced garlic and red pepper flakes, sautéing for 1-2 minutes until the garlic becomes fragrant. Be careful not to let it brown.
4. Create the Sauce:
- Pour in the chicken broth and white wine (if using), scraping the bottom of the skillet to incorporate any flavorful bits. Allow the mixture to simmer for 2-3 minutes.
5. Bring it Together:
- Add the halved cherry tomatoes to the skillet, cooking for an additional 2-3 minutes until they start to soften.
6. Combine Shrimp and Pasta:
- Return the cooked shrimp to the skillet, tossing them in the flavorful sauce. Season with salt and black pepper to taste.
7. Finish with Pasta and Herbs:
- Add the cooked linguine to the skillet, tossing everything together until the pasta is well coated in the garlic butter sauce. If needed, add a splash of pasta water to achieve your desired consistency.
8. Garnish and Serve:
- Sprinkle fresh parsley over the pasta and toss once more. Serve the garlic butter shrimp pasta hot, garnished with grated Parmesan cheese.
