Grilled Lemon Herb Chicken Skewers

 

Ingredients:

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 2 lemons, juiced and zested
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh rosemary, minced
  • 1/4 cup olive oil
  • Salt and black pepper to taste
  • Wooden skewers, soaked in water for at least 30 minutes

Instructions:

  1. In a bowl, combine the lemon juice, lemon zest, minced garlic, chopped parsley, thyme leaves, minced rosemary, olive oil, salt, and black pepper. Mix well to create the marinade.

  2. Place the chicken cubes in a large resealable plastic bag or a shallow dish. Pour half of the marinade over the chicken, making sure each piece is coated. Reserve the remaining marinade for basting later.

  3. Seal the bag or cover the dish and refrigerate the chicken for at least 30 minutes to allow the flavors to meld. For a deeper flavor, marinate the chicken for up to 4 hours or overnight.

  4. Preheat the grill to medium-high heat.

  5. Thread the marinated chicken cubes onto the soaked wooden skewers, leaving a small space between each piece for even cooking.

  6. Place the chicken skewers on the preheated grill and cook for 8-10 minutes, turning occasionally, until the chicken is fully cooked and has a nice char.

  7. During the last few minutes of grilling, baste the chicken skewers with the reserved marinade for added flavor.

  8. Once the chicken reaches an internal temperature of 165°F (74°C) and has a delicious golden color, remove the skewers from the grill.

  9. Allow the skewers to rest for a couple of minutes before serving.

  10. Serve the grilled lemon herb chicken skewers with your favorite side dishes, such as a fresh green salad, couscous, or grilled vegetables.
