Homemade Apple Pie

 

Ingredients:

For the Pie Crust:

  • 2 ½ cups all-purpose flour
  • 1 cup unsalted butter (cold and cut into cubes)
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 6-8 tablespoons ice water

For the Filling:

  • 6 cups of thinly sliced apples (a mix of Granny Smith and Honeycrisp works well)
  • ¾ cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • A pinch of salt
  • 1 tablespoon lemon juice
  • 2 tablespoons unsalted butter (cut into small pieces)

Instructions:

  1. Prepare the Pie Crust:

    • In a large mixing bowl, combine the flour, salt, and sugar. Add the cold, cubed butter. Using a pastry cutter or your fingers, work the butter into the flour mixture until it resembles coarse crumbs.
    • Gradually add ice water, one tablespoon at a time, and mix until the dough comes together. Divide the dough into two equal portions, shape each into a flat disc, wrap in plastic, and refrigerate for at least 1 hour.
  2. Prepare the Filling:

    • In a separate bowl, mix the sliced apples, sugar, flour, cinnamon, nutmeg, salt, and lemon juice until the apples are well coated. Let the mixture sit for around 15-20 minutes.
  3. Preheat the Oven:

    • Preheat the oven to 425°F (220°C).
  4. Roll Out the Dough:

    • On a floured surface, roll out one disc of the chilled dough to fit a 9-inch pie dish. Carefully transfer the dough to the dish.
  5. Assemble the Pie:

    • Fill the pie shell with the prepared apple mixture. Dot the top of the apples with small pieces of butter.
    • Roll out the second disc of dough to cover the pie. You can create a lattice pattern or simply cover the pie with the whole sheet, cutting a few slits for ventilation.
  6. Bake:

    • Place the pie in the preheated oven and bake for 15 minutes. Then reduce the oven temperature to 350°F (175°C) and continue baking for an additional 40-45 minutes or until the crust is golden brown and the filling is bubbling.
  7. Cool and Serve:

    • Allow the pie to cool for at least an hour before serving. Enjoy your delicious homemade apple pie, ideally with a scoop of vanilla ice cream!
