Lemon Garlic Roast Chicken:

 

Ingredients:

  • 1 whole chicken (approximately 4-5 pounds)
  • 4 cloves of garlic, minced
  • 1 lemon (zest and juice)
  • 3 tablespoons olive oil
  • 2 teaspoons fresh rosemary, chopped
  • 2 teaspoons fresh thyme, chopped
  • Salt and pepper to taste
  • 1 onion, quartered
  • 1 lemon, quartered

Instructions:

  1. Preparation: Preheat the oven to 425°F (220°C). Rinse the chicken and pat it dry with paper towels. Place it in a roasting pan or a baking dish.

  2. Make the Marinade: In a bowl, mix the minced garlic, lemon zest, lemon juice, olive oil, chopped rosemary, chopped thyme, salt, and pepper. Stir well to combine the ingredients.

  3. Prepare the Chicken: Carefully lift the skin of the chicken from the breast and thighs by running your fingers under it. Be gentle not to tear the skin. Spread some of the marinade under the skin, rubbing it directly onto the meat.

  4. Season the Chicken: Rub the remaining marinade all over the chicken, ensuring it's evenly coated. Season the cavity of the chicken with some salt and pepper. Stuff the cavity with the quartered onion and lemon.

  5. Roasting: Tie the legs together using kitchen twine if they aren't already. Place the chicken breast-side up in the roasting pan. Roast in the preheated oven for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (74°C) and the juices run clear. If the skin browns too quickly, cover it with foil.

  6. Rest and Serve: Once cooked, remove the chicken from the oven and let it rest for about 15 minutes before carving. This allows the juices to redistribute, resulting in a moist and tender chicken. Carve and serve with your choice of sides.
