Lemon Herb Grilled Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 lemons (zested and juiced)
  • 3 cloves garlic (minced)
  • 2 tablespoons fresh parsley (chopped)
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon dried oregano
  • 1/4 cup olive oil
  • Salt and black pepper to taste

Instructions:

  1. Prepare the Marinade: In a bowl, combine the lemon zest, lemon juice, minced garlic, chopped parsley, thyme leaves, dried oregano, olive oil, salt, and black pepper. Whisk the ingredients together until well incorporated.

  2. Marinate the Chicken: Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes to allow the flavors to meld.

  3. Preheat the Grill: Preheat your grill to medium-high heat. Make sure the grates are clean and lightly oiled to prevent sticking.

  4. Grill the Chicken: Remove the chicken from the marinade, allowing any excess to drip off. Place the chicken breasts on the preheated grill. Grill for approximately 6-8 minutes per side or until the internal temperature reaches 165°F (74°C). Cooking times may vary depending on the thickness of the chicken.

  5. Baste with Marinade: While grilling, baste the chicken with the remaining marinade using a brush. This enhances the flavor and keeps the chicken moist.

  6. Check for Doneness: Ensure the chicken is fully cooked by using a meat thermometer. The juices should run clear, and there should be no pink in the center.

  7. Rest and Serve: Once the chicken is done, remove it from the grill and let it rest for a few minutes. This allows the juices to redistribute, keeping the chicken tender. Serve the grilled chicken with your favorite sides, such as roasted vegetables, rice, or a fresh salad.

  8. Garnish and Enjoy: Garnish the grilled chicken with additional fresh herbs and lemon slices for a burst of color and flavor. Enjoy your Lemon Herb Grilled Chicken!

Note: Feel free to customize the recipe by adding your favorite herbs or adjusting the level of citrusy zing to match your taste preferences.
