Mediterranean Quinoa Salad with Lemon Herb Vinaigrette

 

Ingredients:

For the Salad:

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup Kalamata olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped

For the Lemon Herb Vinaigrette:

  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons fresh lemon juice

  • 1 clove garlic, minced

Instructions:

1. Cook the Quinoa:

  • In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until quinoa is cooked and water is absorbed.
  • Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and let it cool to room temperature.

2. Prepare the Vinaigrette:

3. Assemble the Salad:

  • In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, parsley, and mint.

4. Dress the Salad:
