Recipe 2: Lemon Garlic Butter Shrimp Scampi

 

Lemon Garlic Butter Shrimp Scampi is a delightful seafood dish with a burst of citrus and garlic flavors. It's quick to prepare and perfect for a special dinner.

Ingredients:

  • 1 pound (450g) large shrimp, peeled and deveined
  • 8 ounces (225g) linguine or spaghetti
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • Juice and zest of 1 lemon
  • 1/4 cup (60ml) dry white wine (optional)
  • 1/4 cup (60ml) chicken or vegetable broth
  • Salt and freshly ground black pepper, to taste
  • Chopped fresh parsley, for garnish

Instructions:

  1. Cook the linguine or spaghetti according to the package instructions until al dente. Drain and set aside.

  2. In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add the shrimp and cook for 1-2 minutes per side until they turn pink and opaque. Remove the shrimp from the skillet and set them aside.

  3. In the same skillet, add the remaining 2 tablespoons of butter and minced garlic. Sauté the garlic for about 1 minute until fragrant.

  4. Pour in the white wine (if using) and let it simmer for a few minutes until it reduces slightly.

  5. Add the chicken or vegetable broth, lemon juice, and lemon zest to the skillet. Stir to combine and let the sauce simmer for 2-3 minutes.

  6. Return the cooked shrimp to the skillet and toss them in the lemon garlic butter sauce.

  7. Serve the shrimp scampi over the cooked linguine or spaghetti. Season with salt and freshly ground black pepper. Garnish with chopped fresh parsley.
