Ingredients:

  • 8 oz (225g) fettuccine pasta
  • 2 boneless, skinless chicken breasts
  • Salt and black pepper to taste
  • 2 tablespoons olive oil, divided
  • 4 cloves garlic, minced
  • 1 cup (240ml) chicken broth
  • 1 cup (240ml) heavy cream
  • 1 cup (100g) grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1 cup (150g) cherry tomatoes, halved
  • Fresh parsley, chopped, for garnish

Instructions:

1. Prepare the Chicken:

  • Season the chicken breasts with salt and black pepper.
  • In a large skillet over medium-high heat, add 1 tablespoon of olive oil.
  • Add the chicken breasts and cook until browned on both sides and cooked through, approximately 5-6 minutes per side.

  • Toss everything together until well coated in the sauce and heated through.
  • Adjust seasoning with salt and black pepper to taste.

5. Serve:

  • Garnish the dish with chopped fresh parsley.
