Savory Spinach and Feta Stuffed Chicken Breast"

 

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Toothpicks or kitchen twine (for securing)

For the Lemon Herb Marinade:

  • 1/4 cup olive oil
  • Zest and juice of 1 lemon
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste

Instructions:

  1. Preheat the oven to 375°F (190°C).

  2. In a medium-sized mixing bowl, combine the chopped spinach, crumbled feta, sun-dried tomatoes, minced garlic, olive oil, dried oregano, dried thyme, salt, and pepper. Mix well to create the stuffing.

  3. Lay the chicken breasts flat on a cutting board and carefully cut a pocket into the side of each chicken breast, making sure not to cut all the way through. Season the inside of each pocket with salt and pepper.

  4. Stuff each chicken breast with the spinach and feta mixture, pressing the edges to seal the pocket. Use toothpicks or kitchen twine to secure the opening and keep the stuffing in place.

  5. In a small bowl, whisk together the ingredients for the lemon herb marinade: olive oil, lemon zest, lemon juice, Dijon mustard, fresh parsley, dried oregano, salt, and pepper.

  6. Place the stuffed chicken breasts in a baking dish and brush each breast with the lemon herb marinade, ensuring an even coating.

  7. Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

  8. Once done, remove the toothpicks or twine before serving. Drizzle any remaining lemon herb marinade over the stuffed chicken breasts.
