Garlic Herb Roasted Chicken Recipe

Ingredients:

  • 1 whole chicken (about 4-5 pounds)
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 lemon, sliced
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 425°F (220°C).
  2. Prepare the Chicken:

    • Rinse the whole chicken under cold water and pat it dry with paper towels.
    • Place the chicken on a clean cutting board, breast side up.
  3. Season the Chicken:

    • In a small bowl, mix together minced garlic, chopped rosemary, thyme, parsley, paprika, onion powder, dried oregano, salt, and black pepper.
    • Rub the chicken with olive oil, ensuring it is well-coated.
    • Sprinkle the herb and spice mixture over the entire surface of the chicken, rubbing it into the skin.
  4. Stuff the Chicken:

    • Place sliced lemon inside the cavity of the chicken. This adds a citrusy aroma and flavor to the dish.
  5. Tie the Legs:

    • If your chicken has the legs untied, use kitchen twine to tie them together. This helps the chicken cook more evenly.
  6. Roasting:

    • Place the seasoned and stuffed chicken on a roasting pan or a baking dish, breast side up.
    • Roast the chicken in the preheated oven for about 20 minutes per pound, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
  7. Basting (Optional):

    • If desired, baste the chicken with its own juices every 30 minutes to keep it moist.
  8. Resting:

    • Once the chicken is cooked, remove it from the oven and let it rest for 10-15 minutes before carving. This allows the juices to redistribute.
  9. Carving:

    • Carve the chicken into serving portions, and serve with your favorite side dishes.

Optional Tip: For an extra burst of flavor, you can add additional herbs and garlic to the roasting pan with some vegetables like carrots and potatoes during the last 30 minutes of cooking.

This Garlic Herb Roasted Chicken is not only simple to prepare but also delivers a mouthwatering combination of flavors. Enjoy your delicious homemade roasted chicken!
