Grilled Lemon Herb Chicken Skewers

 

Ingredients:

  • 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 2 lemons, juiced and zested
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme, leaves only
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Wooden skewers, soaked in water for 30 minutes

Instructions:

  1. Marinate the Chicken:

    • In a bowl, combine the lemon juice, lemon zest, olive oil, minced garlic, rosemary, thyme, oregano, paprika, salt, and pepper. Mix well to create the marinade.
    • Place the chicken cubes in a large resealable plastic bag or shallow dish.

  2. Marinate Time:

    • Thread the marinated chicken cubes onto the soaked wooden skewers, leaving a small space between each piece.
  5. Grill the Skewers:

    • Place the chicken skewers on the preheated grill. Cook for approximately 10-12 minutes, turning occasionally, until the chicken is cooked through and has a beautiful golden char.
  6. Baste with Marinade:

    • During the last 5 minutes of grilling, baste the skewers with the reserved marinade using a brush. This adds an extra layer of flavor and helps keep the chicken juicy.
  7. Check for Doneness:

    • Ensure the chicken reaches an internal temperature of 165°F (74°C). Pierce the largest piece with a fork to check for clear juices.
