Grilled Lemon Herb Chicken Skewers

 

Ingredients:

  • 1.5 lbs (about 680g) boneless, skinless chicken breasts, cut into cubes
  • 1/4 cup olive oil
  • 3 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • Wooden skewers, soaked in water for at least 30 minutes

Instructions:

  1. In a bowl, whisk together olive oil, fresh lemon juice, minced garlic, dried oregano, dried thyme, dried rosemary, paprika, salt, and black pepper. This will be the marinade for the chicken.
