Lemon Herb Grilled Chicken Skewers

 

Ingredients:

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 2 lemons, juiced and zested
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper, to taste
  • Wooden skewers, soaked in water for 30 minutes

Instructions:

  1. In a bowl, whisk together the lemon juice, lemon zest, olive oil, minced garlic, oregano, thyme, rosemary, salt, and black pepper. This will be the marinade for the chicken.

  2. Place the chicken cubes in a resealable plastic bag or a shallow dish and pour half of the marinade over the chicken. Ensure that all the chicken pieces are well-coated. Reserve the remaining marinade for basting.

  3. Seal the bag or cover the dish and refrigerate for at least 30 minutes to allow the flavors to meld. For a more intense flavor, you can marinate the chicken for up to 4 hours or overnight.

  4. Preheat the grill to medium-high heat.

  5. Thread the marinated chicken pieces onto the soaked wooden skewers, leaving a small gap between each piece.

  6. Place the skewers on the preheated grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has a nice char.

  7. While grilling, baste the chicken with the reserved marinade for added flavor.

  8. Once the chicken reaches an internal temperature of 165°F (74°C), remove the skewers from the grill.

  9. Allow the chicken skewers to rest for a couple of minutes before serving.
