Grilled Lemon Herb Chicken with Roasted Vegetables

 

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 lemons, juiced and zested
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

For Roasted Vegetables:

  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 red onion, sliced
  • 2 tablespoons olive oil

Instructions:

  1. Marinate the Chicken:

    • In a bowl, combine the lemon juice, lemon zest, olive oil, minced garlic, dried oregano, dried thyme, dried rosemary, salt, and pepper. Mix well to create the marinade.
    • Place the chicken breasts in a resealable plastic bag or shallow dish and pour half of the marinade over them. Ensure the chicken is well-coated, then refrigerate for at least 30 minutes to allow the flavors to infuse.
  2. Preheat the Grill:

    • Preheat your grill to medium-high heat.
  3. Prepare the Roasted Vegetables:

    • In a separate bowl, toss the cherry tomatoes, bell pepper, zucchini, and red onion with olive oil, salt, and pepper.

    • Once the chicken and vegetables are cooked, remove them from the grill and oven, respectively.
    • Plate the grilled chicken breasts and arrange the roasted vegetables alongside.
    • Optionally, garnish with fresh herbs and a squeeze of lemon juice before serving.
