Recipe: Lemon Garlic Shrimp Pasta

 

Ingredients:

  • 8 oz (225g) linguine or spaghetti
  • 1 lb (450g) large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1 lemon, zest and juice
  • 1/4 cup (60ml) extra-virgin olive oil
  • Salt and black pepper, to taste
  • Crushed red pepper flakes, optional for some heat
  • Fresh parsley, chopped, for garnish
  • Grated Parmesan cheese, for serving

Instructions:

1. Cook the Pasta:

  • Bring a large pot of salted water to a boil. Cook the linguine or spaghetti according to the package instructions until al dente. Reserve a cup of pasta water before draining.

2. Prep the Shrimp:

  • In a bowl, season the shrimp with salt, black pepper, and crushed red pepper flakes (if using). Toss to coat the shrimp evenly.

3. Sauté the Shrimp:

  • In a large skillet, heat olive oil over medium-high heat. Add the seasoned shrimp and cook for 1-2 minutes per side until they turn pink and opaque. Add minced garlic to the skillet and sauté for an additional 30 seconds until fragrant.

4. Combine Pasta and Shrimp:

  • Reduce the heat to low. Add the cooked and drained pasta to the skillet with shrimp and garlic. Toss everything together, allowing the flavors to meld.

5. Lemon Zest and Juice:

  • Grate the zest of one lemon directly into the skillet and squeeze the lemon juice over the pasta and shrimp. Adjust the seasoning with salt and black pepper to taste. Toss to combine.

6. Garnish and Serve:

  • If the pasta seems dry, add a splash of the reserved pasta water to create a silky sauce. Stir in fresh chopped parsley for a burst of freshness.

7. Presentation:

  • Divide the lemon garlic shrimp pasta among plates. Garnish with additional parsley and sprinkle with grated Parmesan cheese for added richness.
