Recipe: Mediterranean Chickpea Salad

 

Ingredients:

  • 2 cups cooked chickpeas (or 1 can, drained and rinsed)
  • 1 large cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup crumbled feta cheese (optional)
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon red wine vinegar
  • Juice of 1 lemon
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions:

  1. In a large mixing bowl, combine the cooked chickpeas, diced cucumber, halved cherry tomatoes, chopped red onion, sliced Kalamata olives, and crumbled feta cheese (if using).

  2. In a small bowl, whisk together the extra-virgin olive oil, red wine vinegar, lemon juice, minced garlic, salt, and pepper to create the dressing.

  3. Pour the dressing over the salad ingredients in the large mixing bowl. Toss gently to ensure all the ingredients are well coated.

  4. Sprinkle the chopped fresh parsley over the salad and toss again to distribute evenly.

  5. Taste the salad and adjust the seasoning as needed with additional salt, pepper, or lemon juice.

  6. Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld together.
