Recipe: Spicy Garlic Shrimp Linguine

 

Ingredients:

  • 1 pound (450g) linguine pasta
  • 1 pound (450g) large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1/4 cup (60ml) olive oil
  • 1/4 cup (60ml) dry white wine (optional)
  • Salt and pepper to taste
  • 1/4 cup (60ml) fresh lemon juice
  • 1/4 cup (60g) unsalted butter
  • 1/4 cup (15g) chopped fresh parsley
  • Grated Parmesan cheese for garnish (optional)

Instructions:

  1. Cook the linguine pasta according to the package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.

  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, and sauté for about 1 minute until fragrant. Be careful not to burn the garlic.

  3. Add the shrimp to the skillet and cook for 2-3 minutes on each side until they turn pink and opaque. Season with salt and pepper to taste.

  4. If using white wine, pour it into the skillet and let it simmer for 2-3 minutes until slightly reduced.

  5. Add the cooked linguine to the skillet along with the lemon juice and butter. Toss everything together gently until the pasta is well coated and the butter has melted. If the sauce seems too thick, add some of the reserved pasta water to loosen it up.

  6. Sprinkle chopped parsley over the pasta and shrimp, and toss again to combine.

  7. Serve the spicy garlic shrimp linguine hot, garnished with grated Parmesan cheese if desired.

  8. Enjoy your delicious and flavorful meal!

Note: Feel free to adjust the level of spiciness by increasing or decreasing the amount of red pepper flakes according to your preference. You can also add some cherry tomatoes or spinach for extra flavor and nutrition.
