Recipe: Vegetable Stir-Fry with Tofu
Ingredients:
For the Stir-Fry Sauce:
- 1/4 cup soy sauce
- 2 tablespoons hoisin sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 2 teaspoons cornstarch
- 1 teaspoon grated ginger
- 2 cloves garlic, minced
- 1 tablespoon honey or brown sugar (optional)
For the Stir-Fry:
- 14 oz (400g) firm tofu, pressed and cubed
- 2 tablespoons cornstarch
- 2 tablespoons vegetable oil, divided
- 1 bell pepper, sliced
- 1 medium carrot, julienned
- 1 cup broccoli florets
- 1 cup snap peas, trimmed
- 1 cup sliced mushrooms
- 4 green onions, sliced
- Cooked rice or noodles, for serving
Instructions:
Prepare the Stir-Fry Sauce: In a small bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, sesame oil, cornstarch, grated ginger, minced garlic, and honey or brown sugar (if using). Set aside.
Prepare the Tofu: Press the tofu between paper towels or clean kitchen towels to remove excess moisture. Cut the tofu into cubes and toss them in cornstarch until coated.
Cook the Tofu: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the tofu cubes and cook until golden and crispy on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.
Stir-Fry the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the sliced bell pepper, julienned carrot, broccoli florets, snap peas, and sliced mushrooms. Stir-fry for 4-5 minutes until the vegetables are tender-crisp.
Combine with Tofu: Return the cooked tofu to the skillet with the vegetables. Stir to combine.
Add the Sauce: Pour the prepared stir-fry sauce over the tofu and vegetables in the skillet. Stir well to coat everything evenly.
Simmer: Allow the sauce to simmer for 2-3 minutes, or until it thickens slightly and coats the tofu and vegetables.
Finish and Serve: Remove the skillet from the heat and stir in the sliced green onions. Serve the vegetable stir-fry hot over cooked rice or noodles.
