Recipe: Vegetable Stir-Fry with Tofu

 

Ingredients:

For the Stir-Fry Sauce:

  • 1/4 cup soy sauce
  • 2 tablespoons hoisin sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 teaspoons cornstarch
  • 1 teaspoon grated ginger
  • 2 cloves garlic, minced
  • 1 tablespoon honey or brown sugar (optional)

For the Stir-Fry:

  • 14 oz (400g) firm tofu, pressed and cubed
  • 2 tablespoons cornstarch
  • 2 tablespoons vegetable oil, divided
  • 1 bell pepper, sliced
  • 1 medium carrot, julienned
  • 1 cup broccoli florets
  • 1 cup snap peas, trimmed
  • 1 cup sliced mushrooms
  • 4 green onions, sliced
  • Cooked rice or noodles, for serving

Instructions:

  1. Prepare the Stir-Fry Sauce: In a small bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, sesame oil, cornstarch, grated ginger, minced garlic, and honey or brown sugar (if using). Set aside.

  2. Prepare the Tofu: Press the tofu between paper towels or clean kitchen towels to remove excess moisture. Cut the tofu into cubes and toss them in cornstarch until coated.

  3. Cook the Tofu: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the tofu cubes and cook until golden and crispy on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.

  4. Stir-Fry the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the sliced bell pepper, julienned carrot, broccoli florets, snap peas, and sliced mushrooms. Stir-fry for 4-5 minutes until the vegetables are tender-crisp.

  5. Combine with Tofu: Return the cooked tofu to the skillet with the vegetables. Stir to combine.

  6. Add the Sauce: Pour the prepared stir-fry sauce over the tofu and vegetables in the skillet. Stir well to coat everything evenly.

  7. Simmer: Allow the sauce to simmer for 2-3 minutes, or until it thickens slightly and coats the tofu and vegetables.

  8. Finish and Serve: Remove the skillet from the heat and stir in the sliced green onions. Serve the vegetable stir-fry hot over cooked rice or noodles.

  9. Enjoy: Garnish with additional sliced green onions or sesame seeds if desired, and enjoy this flavorful and nutritious vegetable stir-fry with tofu!
