Recipe: Antipasto Platter

 

Ingredients:

For the Platter:

  • Assorted cured meats (such as salami, prosciutto, and coppa)
  • Assorted cheeses (such as mozzarella, provolone, and aged Parmesan)
  • Marinated vegetables (such as artichoke hearts, roasted red peppers, and olives)
  • Fresh vegetables (such as cherry tomatoes, cucumber slices, and carrot sticks)
  • Italian bread or crackers
  • Fresh herbs (such as basil and rosemary) for garnish

For the Balsamic Glaze (Optional):

  • 1/2 cup balsamic vinegar
  • 2 tablespoons honey or brown sugar

Instructions:

  1. Prepare the Meats and Cheeses:

    • Arrange the assorted cured meats and cheeses on a large serving platter. You can fold or roll the slices of meat for a visually appealing presentation.
  2. Add Marinated and Fresh Vegetables:

    • Arrange the marinated vegetables, such as artichoke hearts, roasted red peppers, and olives, around the meats and cheeses on the platter.
    • Place the fresh vegetables, such as cherry tomatoes, cucumber slices, and carrot sticks, in between the meats and cheeses.
  3. Add Bread or Crackers:

    • Place Italian bread slices or crackers on the platter alongside the meats, cheeses, and vegetables.
  4. Garnish with Fresh Herbs:

    • Garnish the platter with fresh herbs, such as basil leaves and rosemary sprigs, for added flavor and visual appeal.
  5. Make the Balsamic Glaze (Optional):

    • If desired, prepare a balsamic glaze by combining balsamic vinegar and honey or brown sugar in a small saucepan. Bring to a simmer over medium heat and cook until the mixture is thick and syrupy, about 10-15 minutes. Remove from heat and let it cool slightly before drizzling over the antipasto platter.
  6. Serve:

    • Serve the antipasto platter at room temperature as an appetizer or part of a larger spread for a gathering or party.
