Recipe: Antipasto Skewers

 

Ingredients:

  • 24 cherry tomatoes
  • 24 bocconcini (mini mozzarella balls)
  • 24 slices of salami or pepperoni, folded into quarters
  • 24 small basil leaves
  • 1/4 cup black olives, pitted
  • 1/4 cup green olives, pitted
  • 1/4 cup marinated artichoke hearts, drained
  • 1/4 cup roasted red peppers, sliced into strips
  • Balsamic glaze, for drizzling (optional)
  • Bamboo skewers

Instructions:

  1. Prepare Ingredients:

    • Drain any excess liquid from the olives, artichoke hearts, and roasted red peppers.
    • If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. Assemble Skewers:

    • Thread one cherry tomato, one bocconcini ball, one folded slice of salami or pepperoni, one basil leaf, one black olive, one green olive, one marinated artichoke heart, and one strip of roasted red pepper onto each skewer.
    • Repeat until all ingredients are used, making approximately 24 skewers.
  3. Arrange Skewers:

    • Arrange the assembled antipasto skewers on a serving platter or tray.
  4. Drizzle with Balsamic Glaze (Optional):

    • If desired, drizzle balsamic glaze over the skewers for extra flavor and presentation.
  5. Serve:
