Recipe: Avocado Toast with Poached Eggs

Ingredients:

  • 2 slices of whole grain bread
  • 1 ripe avocado
  • 2 large eggs
  • 1 tablespoon white vinegar (for poaching eggs)
  • Salt and pepper to taste
  • Red pepper flakes (optional)
  • Fresh herbs such as parsley or chives, chopped (optional)
  • Cherry tomatoes, sliced (optional)

Instructions:

  1. Toast the Bread:

    • Toast the slices of whole grain bread to your desired level of crispiness.
  2. Prepare the Avocado:

    • Cut the ripe avocado in half and remove the pit. Scoop out the flesh into a small bowl. Use a fork to mash the avocado until smooth.
  3. Poach the Eggs:

    • Fill a medium-sized saucepan with water and bring it to a gentle simmer over medium heat. Add the white vinegar to the water.
    • Crack each egg into a small bowl or ramekin. Carefully slide each egg into the simmering water. Poach the eggs for about 3-4 minutes for soft yolks or longer for firmer yolks.
    • Use a slotted spoon to carefully remove the poached eggs from the water and drain them on a paper towel.
  4. Assemble the Avocado Toast:

    • Spread the mashed avocado evenly onto the toasted bread slices.
    • Place a poached egg on top of each slice of avocado toast.
  5. Season and Garnish:

    • Season the avocado toast with salt, pepper, and red pepper flakes to taste.
    • Garnish with chopped fresh herbs such as parsley or chives, if desired.
    • Add sliced cherry tomatoes on top for extra freshness and flavor, if desired.
  6. Serve:
