  • Salt and pepper to taste
  • 1/3 cup Dijon mustard
  • 1/4 cup honey
  • 2 tablespoons whole grain mustard
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 375°F (190°C).
  2. Season the Chicken:

    • Season the chicken breasts with salt and pepper on both sides.
  3. Make the Honey Mustard Sauce:

    • In a small bowl, whisk together Dijon mustard, honey, whole grain mustard, minced garlic, olive oil, lemon juice, dried thyme, and paprika until well combined.
  4. Coat the Chicken:

    • Place the chicken breasts in a baking dish or oven-safe skillet. Pour the honey mustard sauce over the chicken, spreading it evenly to coat.

  6. Broil (Optional):

    • If desired, broil the chicken for an additional 2-3 minutes after baking to brown the top and caramelize the sauce.
  7. Rest and Serve:

    • Remove the chicken from the oven and let it rest for a few minutes before serving.
    • Garnish with chopped fresh parsley if desired.
  8. Enjoy!

    • Serve the baked honey mustard chicken hot with your favorite sides, such as roasted vegetables, rice, or mashed potatoes. It's a delicious and easy-to-make meal that's perfect for busy weeknights or special occasions.
