Recipe: Italian Sausage and Pepper Pasta
Ingredients:
- 12 ounces (340g) penne pasta
- 1 tablespoon olive oil
- 1 pound (450g) Italian sausage, casings removed
- 1 onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1 can (14.5 ounces) diced tomatoes
- Salt and pepper to taste
- Grated Parmesan cheese for serving
- Chopped fresh parsley for garnish (optional)
Instructions:
Cook the Pasta:
- Cook the penne pasta according to the package instructions until al dente. Drain and set aside.
Cook the Sausage and Peppers:
- In a large skillet or sauté pan, heat olive oil over medium heat. Add the Italian sausage and cook, breaking it apart with a spoon, until browned and cooked through.
- Add the sliced onion and bell peppers to the skillet. Cook for 5-7 minutes, or until the vegetables are softened.

- Season the sausage and pepper mixture with salt and pepper to taste. Add the cooked penne pasta to the skillet and toss until well coated with the sauce.
Serve:
