Recipe: Italian Sausage and Pepper Pasta

 

Ingredients:

  • 12 ounces (340g) penne pasta
  • 1 tablespoon olive oil
  • 1 pound (450g) Italian sausage, casings removed
  • 1 onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1 can (14.5 ounces) diced tomatoes
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Cook the Pasta:

    • Cook the penne pasta according to the package instructions until al dente. Drain and set aside.
  2. Cook the Sausage and Peppers:

    • In a large skillet or sauté pan, heat olive oil over medium heat. Add the Italian sausage and cook, breaking it apart with a spoon, until browned and cooked through.
    • Add the sliced onion and bell peppers to the skillet. Cook for 5-7 minutes, or until the vegetables are softened.
  3. Add Garlic and Spices:

    • Add the minced garlic, dried oregano, dried basil, and crushed red pepper flakes (if using) to the skillet. Cook for an additional 1 minute until fragrant.
  4. Combine with Tomatoes:

    • Stir in the diced tomatoes (with their juices) and bring the mixture to a simmer. Cook for 5-7 minutes, stirring occasionally, to allow the flavors to meld together.
  5. Season and Toss with Pasta:

    • Season the sausage and pepper mixture with salt and pepper to taste. Add the cooked penne pasta to the skillet and toss until well coated with the sauce.
  6. Serve:

    • Serve the Italian sausage and pepper pasta hot, garnished with grated Parmesan cheese and chopped fresh parsley, if desired.
