Recipe: Spinach and Feta Stuffed Chicken Breast

 

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach leaves
  • 1/2 cup crumbled feta cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Toothpicks or kitchen twine

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 375°F (190°C).
  2. Prepare the Chicken:

    • Place each chicken breast between two sheets of plastic wrap or parchment paper. Use a meat mallet or rolling pin to pound the chicken to an even thickness, about 1/2 inch thick.
  3. Saute the Spinach and Garlic:

    • In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add fresh spinach leaves and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
  4. Stuff the Chicken:

    • Lay the pounded chicken breasts flat on a cutting board. Divide the sautéed spinach evenly among the chicken breasts, placing it in the center of each breast. Top the spinach with crumbled feta cheese.
  5. Roll the Chicken:

    • Starting at one end, roll up each chicken breast, enclosing the spinach and feta filling. Secure the seams with toothpicks or tie with kitchen twine to hold the stuffed chicken together.
  6. Season the Chicken:

    • Place the stuffed chicken breasts in a baking dish. Season the outside of the chicken with dried oregano, salt, and pepper to taste.
  7. Bake:

    • Bake the stuffed chicken breasts in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  8. Rest and Serve:

    • Remove the stuffed chicken breasts from the oven and let them rest for a few minutes before slicing.
    • Remove the toothpicks or kitchen twine before serving.
