Recipe: Teriyaki Salmon with Stir-Fried Vegetables

 

Ingredients:

For the Teriyaki Salmon:

  • 4 salmon fillets (about 6 ounces each), skin-on or skinless
  • 1/4 cup soy sauce
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon sesame oil
  • 2 tablespoons water
  • 1 tablespoon cornstarch
  • Sesame seeds and sliced green onions for garnish (optional)

For the Stir-Fried Vegetables:

  • 2 cups mixed vegetables (bell peppers, broccoli, snap peas, carrots, etc.), sliced or chopped
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • Salt and pepper, to taste

Instructions:

  1. Prepare the Teriyaki Sauce:

    • In a small saucepan, combine the soy sauce, honey or maple syrup, rice vinegar, minced garlic, grated ginger, sesame oil, and water. Bring to a simmer over medium heat.
    • In a small bowl, whisk together the cornstarch with 1 tablespoon of water to make a slurry. Stir the slurry into the saucepan.
    • Cook the sauce, stirring constantly, until it thickens to your desired consistency. Remove from heat and set aside.
  2. Marinate the Salmon:

    • Place the salmon fillets in a shallow dish or resealable plastic bag. Pour half of the teriyaki sauce over the salmon, reserving the other half for later. Marinate the salmon in the refrigerator for at least 30 minutes, or up to 2 hours.
  3. Cook the Salmon:

    • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
    • Remove the salmon from the marinade and place them on the prepared baking sheet. Discard the used marinade.
    • Bake the salmon for 12-15 minutes, or until cooked through and flaky. You can also grill or pan-sear the salmon if preferred.
  4. Prepare the Stir-Fried Vegetables:

    • In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and grated ginger, and sauté for 1 minute until fragrant.
    • Add the mixed vegetables to the skillet and stir-fry for 3-4 minutes, or until they are crisp-tender.
    • Stir in the soy sauce and oyster sauce (if using). Season with salt and pepper to taste. Cook for another minute, then remove from heat.
  5. Serve:

    • Arrange the teriyaki salmon fillets on serving plates. Spoon the remaining teriyaki sauce over the salmon.
    • Serve the salmon alongside the stir-fried vegetables. Garnish with sesame seeds and sliced green onions if desired.
