Recipe: Teriyaki Tofu Stir Fry
Ingredients:
For the Teriyaki Sauce:
- 1/4 cup soy sauce
- 2 tablespoons water
- 2 tablespoons honey or maple syrup
- 1 tablespoon rice vinegar
- 1 clove garlic, minced
- 1 teaspoon minced ginger
- 1 teaspoon cornstarch
For the Stir Fry:
- 14 oz (400g) extra firm tofu, pressed and cubed
- 2 tablespoons vegetable oil
- 1 bell pepper, sliced
- 1 carrot, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- Cooked rice for serving
- Sesame seeds for garnish (optional)
- Sliced green onions for garnish (optional)
Instructions:
Prepare the Teriyaki Sauce:
- In a small bowl, whisk together soy sauce, water, honey or maple syrup, rice vinegar, minced garlic, minced ginger, and cornstarch until well combined. Set aside.
Prepare the Tofu:
- Press the tofu to remove excess moisture. Slice the pressed tofu into cubes.
Stir Fry the Tofu:
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat. Add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.
Stir Fry the Vegetables:
- In the same skillet or wok, heat the remaining 1 tablespoon of vegetable oil over medium heat. Add the sliced bell pepper, carrot slices, broccoli florets, and snap peas. Stir fry for 5-7 minutes, or until the vegetables are tender-crisp.
Combine Tofu and Vegetables:
- Return the cooked tofu to the skillet with the stir-fried vegetables.
Add Teriyaki Sauce:
- Pour the prepared teriyaki sauce over the tofu and vegetables in the skillet. Stir well to coat everything evenly with the sauce.
Simmer and Thicken Sauce:
- Bring the mixture to a simmer and cook for 2-3 minutes, stirring occasionally, until the sauce has thickened.
Serve:
- Serve the teriyaki tofu stir fry hot over cooked rice.
Garnish and Enjoy:
- Garnish with sesame seeds and sliced green onions, if desired.
