Recipe: Veggie-Packed Quinoa Fried Rice

 

Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth or water
  • 2 tablespoons sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 small onion, finely chopped
  • 2 carrots, diced
  • 1 bell pepper, diced
  • 1 cup frozen peas
  • 2 tablespoons soy sauce or tamari
  • 2 eggs, lightly beaten
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions:

  1. Cook the Quinoa:

    • In a medium saucepan, bring the vegetable broth or water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15-20 minutes or until the liquid is absorbed and the quinoa is tender. Remove from heat and let it cool slightly.
  2. Prepare the Stir-Fry:

    • Heat sesame oil in a large skillet or wok over medium heat. Add minced garlic and ginger, and sauté for 1 minute until fragrant.
    • Add chopped onion, diced carrots, and diced bell pepper to the skillet. Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender.
  3. Add Frozen Peas and Quinoa:

    • Stir in the frozen peas and cooked quinoa. Cook for an additional 2-3 minutes until the peas are heated through.
  4. Stir in Soy Sauce:

    • Pour soy sauce or tamari over the quinoa and vegetable mixture. Stir well to combine and evenly distribute the sauce.
  5. Make a Well in the Center:

    • Push the quinoa and vegetable mixture to one side of the skillet to create a well in the center.
  6. Scramble the Eggs:

    • Pour the lightly beaten eggs into the well. Let them cook for a few seconds until they start to set, then gently scramble them with a spatula until cooked through.
  7. Combine Everything:

    • Once the eggs are cooked, stir them into the quinoa and vegetable mixture until evenly distributed.
  8. Season and Garnish:

    • Season the quinoa fried rice with salt and pepper to taste. Garnish with chopped green onions, if desired.
  9. Serve:
