Recipe: Veggie-Packed Quinoa Fried Rice
Ingredients:
- 1 cup quinoa, rinsed
- 2 cups vegetable broth or water
- 2 tablespoons sesame oil
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 small onion, finely chopped
- 2 carrots, diced
- 1 bell pepper, diced
- 1 cup frozen peas

Instructions:
Cook the Quinoa:
- In a medium saucepan, bring the vegetable broth or water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15-20 minutes or until the liquid is absorbed and the quinoa is tender. Remove from heat and let it cool slightly.
Prepare the Stir-Fry:

Add Frozen Peas and Quinoa:

Stir in Soy Sauce:
- Pour soy sauce or tamari over the quinoa and vegetable mixture. Stir well to combine and evenly distribute the sauce.
Make a Well in the Center:
- Push the quinoa and vegetable mixture to one side of the skillet to create a well in the center.
Scramble the Eggs:
- Pour the lightly beaten eggs into the well. Let them cook for a few seconds until they start to set, then gently scramble them with a spatula until cooked through.
Combine Everything:
- Once the eggs are cooked, stir them into the quinoa and vegetable mixture until evenly distributed.
Season and Garnish:
- Season the quinoa fried rice with salt and pepper to taste. Garnish with chopped green onions, if desired.
