Recipe: Creamy Garlic Mushroom Pasta

Ingredients:

  • 8 oz (225g) pasta (such as linguine or fettuccine)
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 pound (450g) mushrooms, sliced (such as button or cremini)
  • 4 cloves garlic, minced
  • 1 cup chicken or vegetable broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Cook the Pasta:

    • Cook the pasta according to the package instructions in a pot of salted boiling water until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.
  2. Sauté the Mushrooms:

    • In a large skillet, heat the butter and olive oil over medium-high heat. Add the sliced mushrooms and cook, stirring occasionally, until they are golden brown and tender, about 5-7 minutes.
  3. Add Garlic:

    • Add the minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant.
  4. Make the Sauce:

    • Pour in the chicken or vegetable broth and bring to a simmer. Allow the broth to reduce slightly, about 2-3 minutes.
  5. Add Cream:

    • Lower the heat to medium and stir in the heavy cream. Let the sauce simmer gently for 3-4 minutes until slightly thickened.
  6. Combine Pasta and Sauce:

    • Add the cooked pasta to the skillet with the creamy mushroom sauce. Toss to coat the pasta evenly with the sauce, adding reserved pasta water as needed to reach desired consistency.
  7. Add Parmesan:

    • Stir in the grated Parmesan cheese until it melts and blends into the sauce. Season with salt and pepper to taste.
  8. Garnish and Serve:

    • Garnish the creamy garlic mushroom pasta with chopped fresh parsley for a pop of color and freshness.
  9. Enjoy!

    • Serve the pasta hot, and enjoy the rich and creamy flavors of this delicious garlic mushroom dish. It's perfect for a cozy dinner at home or for impressing guests with minimal effort!
